Courbière was born as Amélie Bauer in Bas-Rhin department, then Alsace (now Grand Est). She started working in a bakery aged 17 and later married her husband, who was a firefighter.
At the age of 102, Courbière moved to Étampes, a commune near the center of Paris. By 2023, she was living in nearby Cerny. As a centenarian, she was a great-great-grandmother and was known for her kindness to everyone.
Courbière died in Cerny on 3 September 2023 at the age of 110 years, 165 days.
On her 106th birthday, Courbière was presented with a bouquet of flowers by the mayor of Étampes, Bernard Laplace, as well as several other dignitaries.
